Want to add a little WOW factor to your next gathering with friends?
This recipe will get you rave reviews with the minimum of preparation time.
Bake them up at your leisure and then freeze them. Thaw and serve with
slices of Parmigiano-Reggiano and a glass of wine….or good coffee…or YOUR
favorite beverage! Here’s the recipe:
RED WINE BISCOTTI
2-1/2 cups unbleached flour
1/2 cup raw (turbinado) sugar
1-1/2 teaspoon baking powder
1 teaspoon kosher salt
1 teaspoon freshly ground course black pepper
1/3 cup lightly toasted sesame seeds (toast until golden brown on a baking sheet in 350 degree oven)
1/2 cup DRY red wine OR marsala
1/2 cup olive oil
Combine dry ingredients well; add wine and olive oil and mix together thoroughly (I like to use the
paddle of my Kitchen Aid mixer for this step). Mixture will not stick together readily until you gather
it together with your hands and form it into ‘logs’ that are wider than they are high. Cut into slices
approximately 3/8″ thick and place in rows on a baking sheet (no need to grease the sheet). Bake in
350 degree oven for 25 minutes or until biscotti are golden brown and dry. Cool well on a baking
rack before placing in an airtight container. Freeze if biscotti are not going to be served within 3 days

We’ve been proud to claim our certification with Travel Green Wisconsin from its earliest beginnings, and we’ve continued to strive to improve the ‘green factor’ of our business. We don’t ‘shout it from the rooftops’ but our guests often take notice and ask for more details. The good news is that these days, everyone is likely to be more aware and in tune with efforts to live in an environmentally friendly way. It’s rewarding to observe this change in attitude!
Sometimes the ripple effect works in reverse, with news trickling down to the local level from the state level. Such seems to be the case in this instance, as our local newspaper, The Ozaukee Press, has now printed a nice article about the Port Washington Inn upon hearing of our Eco Elegant Inn election.
We love that people in Ozaukee County now know of our commitment to the environment
and to our fellow local business owners. We need to stick together!
